Breakfast Burrito

Makes 2 Burritos
INGREDIENTS
3 Tbsps Vegan Butter
2 Large Flour Tortilla
¼ cup Vegan Shredded Cheddar Cheese
1 cup Egg Replacement (We used Just Egg— Tofu Scramble works too)
1/2 cup Hash Browns
1 8oz package of Blackbird Sausage
1 Ripe Avocado
Sriracha
Salt and pepper
METHOD
Cook Hash Browns according to package instructions and set aside
Sauté Blackbird Sausage lightly in 1 tbsp Vegan Butter and set aside
Melt 1 tbsp Vegan Butter in a medium sized non-stick pan at medium high heat, add 1/8 cup Cheese and half your Vegan Egg
Once this begins to cook slightly, add 1 tortilla on top and cover with lid, cook for 3 minutes
Once egg is released from pan, flip onto a plate, top with 1/4 cup Hash Browns, 2.5 oz Sausage, Half Sliced Avocado, Sriracha drizzle, Salt and Pepper. Roll into a burrito.
Repeat process with second burrito.
Serve warm!
