Breakfast Burrito

Makes 2 Burritos

INGREDIENTS

  • 3 Tbsps Vegan Butter

  • 2 Large Flour Tortilla

  • ¼ cup Vegan Shredded Cheddar Cheese

  • 1 cup Egg Replacement (We used Just Egg— Tofu Scramble works too)

  • 1/2 cup Hash Browns

  • 1 8oz package of Blackbird Sausage 

  • 1 Ripe Avocado 

  • Sriracha

  • Salt and pepper 

METHOD

  1. Cook Hash Browns according to package instructions and set aside

  2. Sauté Blackbird Sausage lightly in 1 tbsp Vegan Butter and set aside 

  3. Melt 1 tbsp Vegan Butter in a medium sized non-stick pan at medium high heat, add 1/8 cup Cheese and half your Vegan Egg 

  4. Once this begins to cook slightly, add 1 tortilla on top and cover with lid, cook for 3 minutes

  5. Once egg is released from pan, flip onto a plate, top with 1/4 cup Hash Browns, 2.5 oz Sausage, Half Sliced Avocado, Sriracha drizzle, Salt and Pepper. Roll into a burrito.

  6. Repeat process with second burrito.

  7. Serve warm!
