Thai-style larb with seitan and mushrooms
Start by heating olive oil or some other neutral oil in a pan on medium heat. Add:
1/2 Onion, chopped
3 cloves of garlic, chopped
Once the onions and garlic become soft and fragrant, add:
3/4 container of white mushrooms, chopped
One package of Blackbird Foods Original Seitan
Once the mushrooms begin to sweat, mix in:
1 1/2-2 tablespoons of soy sauce (to taste)
1 tablespoon vegan fish sauce
1 teaspoon of Sriracha
1 tablespoon of brown sugar
Mix all ingredients until well combined, and there is not too much spare liquid in pan. Plate with:
White rice
On a bed of spring mix
Top with:
Pickled red onions
Lime
