Blackbird Chick’n & Waffles
Ingredients
1 8oz pack Blackbird Original Seitan
6 tablespoons vegan butter
2 cups all-purpose flour (+.5 cups for frying)
1 tbsp sugar
1 tsp baking powder
1 tsp fine salt
½ tsp baking soda
2 cup plant-based milk
1 tbsp lemon juice
4 large eggs / egg replacer equivalent
Directions
Melt butter, set aside.
Mix dry ingredients and wet ingredients in separate bowls [dry: flour, sugar, baking powder, salt, baking soda.][wet: melted butter, milk, lemon juice, egg replacer.]
Heat a pan with a shallow layer of neutral oil.
Dip Seitan into flour then waffle batter and fry on each side until crispy. Set aside on paper towel.
Pour batter in waffle iron according to the iron’s instructions.
Top with your chick’n, and pour over maple syrup.
Note: To save on time, feel free to use any waffle mix of your choosing.
