Blackbird Yakitori

Ingredients

  • 2 LB Blackbird Seitan Wings

  • 1 tbsp cooking sake

  • 1 tbsp mirin

  • 3 tbsp soy sauce

  • 2 tbsp brown sugar

  • 1-2 tsp Cornstarch

  • 2 garlic cloves, grated

  • 1/2 tsp fresh ginger, grated

  • Splash of sesame oil

  • Shichimi pepper seasoning (optional)

Directions

  1. Defrost the seitan and cut into small pieces. Set aside to prepare marinade.

  2. Peel & grate the garlic and ginger.

  3. In a bowl, whisk together the cooking sake, mirin, soy sauce, brown sugar, cornstarch, garlic, ginger, sesame oil, and the shichimi pepper seasoning.

  4. Bring the marinade to a boil. Once heated, pour over seitan and allow it to marinade. The longer the marinaded, the better! (Preferably overnight)

  5. After marinating, add the seitan to skewers.

  6. To cook, add them to a grill or stovetop grill. Cook until golden brown or to desired crisp.

  7. Serve with Sumomo, a Japanese Cucumber Salad.
