Comfort Seitan + Potatoes (One Pot)

Serves 3-4

INGREDIENTS:

  • 1 box Blackbird Chili Lime Seitan (8 oz)*

  • 4-5 Large Potatoes

  • 1-2 tablespoons Olive Oil

  • 1/2 teaspoon Curry Powder (Optional)

  • 1/4 teaspoon Salt

  • 1/4 teaspoon Black Pepper

  • 1/2 cup White Onion (Diced)

  • 1/2 cup Celery (Diced)

METHOD:

  1. Preheat oven to 450F.

  2. Cut potatoes into quarters. Add potatoes into a medium sized oven-safe pan with sides. Pour Olive Oil into pan and stir to evenly coat potatoes. Add in Curry Powder, Salt, Pepper and stir.

  3. Dice White Onion and Celery. Remove Blackbird Chili Lime Seitan from packaging. Add seitan shreds, White Onion, and Celery into pan. Stir mixture together.

  4. Roast in oven for 40-45 minutes until potatoes are soft. Serve and enjoy!

NOTES:

  1. *Other Blackbird seitan flavors would work well in this recipe too. We just usually make it with the Chili Lime. :)

  2. Keeps well in the fridge for 2 days after making.
