Focaccia Veggie Sandwich

INGREDIENTS
Focaccia , sliced in half
Roasted Red Bell Peppers
Roasted Zucchini
Blackbird Original Seitan, lightly sauteed in oil
Plant-Based Mozzarella Cheese
2 cloves Garlic, grated
¼ cup Plant-Based Mayonnaise
1 Tbsp Lemon Juice
1 tsp Lemon Zest
1 tsp Dijon Mustard
Balsamic Vinegar
METHOD
Slice zucchini into 1/4inch thick pieces, season with olive oil, salt and pepper and roast at 400 for 10 minutes
Saute Blackbird Original Seitan in oil and set aside once browned on all sides
Mix mayonnaise, lemon juice and zest, dijon mustard, garlic, salt and pepper
Slice focaccia in half, drizzle balsamic on one side and mayonnaise mixture on the other, top with red pepper, zucchini, seitan and cheese
Place in the oven on broil until cheese is melted, remove from oven and close, slice and serve immediately
