Seitan and Cauliflower Wings

INGREDIENTS

  • 1 head Cauliflower

  • 1 box (7.5 oz) box of Original Seitan

  • 1 cup Self Rising Flour

  • 1 tsp Old Bay

  • 1 tsp Garlic Salt

  • 1 tsp Onion Powder

  • Salt and Pepper to taste

  • 1 cup Seltzer Water

  • 1 Tbsp vegan Butter

  • 1/2 cup Frank’s Hot Sauce

  • 1 tsp vegan Worcestershire Sauce or Coconut Aminos

  • 2 cups Vegetable Oil

METHOD

  1. Heat oil in deep pot at high heat

  2. Cut cauliflower and seitan into bite sized pieces and set aside

  3. Add the flour and spices to a bowl and whisk to combine, add sparking water and whisk, mixture should be the consistency of buttermilk

  4. Once oil has reached 350 degrees Fahrenheit, begin dredging pieces of cauliflower and seitan and placing in the oil, if the oil is hot enough they will not stick to the bottom of the pan

  5. Melt butter in pan, add hot sauce and vegan Worcestershire sauce and stir to evenly combine, set aside and finish frying cauliflower and seitan in batched, not to over crowd the pot

  6. Once done frying, around 7-10 minutes per piece, immediately toss cauliflower and seitan into hot sauce mixture and serve topped with scallions and vegan ranch dressing
