Vegan Chicken (Seitan) Rice Soup
Blackbird Foods Recipe
Three Servings *Note that this a small batch recipe, ideal for those who cook for one or two. Double recipe for extra servings.
INGREDIENTS:
1 box Original Blackbird Seitan (8 oz)
1 tablespoon Olive Oil
1/2 tablespoon Minced Garlic
1/4 teaspoon Taco Seasoning (sub Ground Cayenne for heat)
1/4 teaspoon Ground Pepper
1/4 teaspoon Salt
1/4 teaspoon Paprika
1/4 cup Chopped Onions
1 Celery Stick (chopped)
1 1/2 Carrots (chopped)
32 oz Vegetable Stock
1 Bay Leaf
1/2 cup Dry Brown Rice
1 cup Kale (chopped)
1 cup Water/Vegetable Stock
Thyme to garnish (optional)
METHOD:
In large saucepan or medium pot, heat Olive Oil on low. Stir in Minced Garlic, Taco Seasoning, Ground Pepper, Salt, and Paprika. Add Blackbird Original Seitan into pot. If using a different brand, you’ll want to pre-shred the seitan. Let sauté in seasonings for 3-4 minutes on low heat.
Chop Onion, Celery, and Carrots. Add the vegetables into the pot. Stir together and pour in 32 oz of Vegetable Stock. Add Bay Leaf. Keep heat on low and place lid on top of pot. Let simmer for 20 minutes.
After 20 minutes, stir in Dry Rice. Place lid back on and allow to simmer for another 20 minutes.
Chop Kale and stir it into the soup. Add in more Water/Vegetable Stock. Let simmer for another 5-10 minutes.
Remove from heat and serve with Thyme to garnish.
NOTES:
Taco Seasonings gives this recipe a bit of heat and flavor. If you do not have taco seasoning, you can substitute other seasonings of your preference.
