Lazy Lo Mein
Ingredients
1 package Blackbird original seitan
1 medium onion, slices
4 cups of vegetables of choice (I used oyster mushrooms, carrots, and green beans)
4 servings of noodles, cooked according to package
Sauce
2 cloves of fresh garlic
1/2” piece of fresh ginger
1 tablespoon coconut aminos
1/4 cup liquid aminos or soy sauce
1 tablespoon tahini
1/3 cup water
Optional: sesame oil and sesame seeds
Instructions
Blend sauce ingredients in a blender until smooth
Coat seitan in two tablespoons of sauce and set the rest aside for later
Cover seitan and refrigerate for at least 30 minutes
In a small pan, sauté seitan on medium high heat for 5-7 minutes until browned
In a large pan, sauté onion and vegetables in a large pan for 13-15 minutes on medium high heat until tender
Combine cooked noodles, seitan, vegetables, and sauce in large bowl
To serve drizzle with sesame oil and top with sesame seeds and enjoy!
