Seitan Summer Rolls

Ingredients

1 package of Blackbird Chili Lime Seitan

8 rice paper wraps

2 large carrots

2 bell peppers

1 cucumber

Almond Butter Sauce

3 tablespoons Jem Organics Almond butter

Juice of half a lime

1 medjool date

½ inch piece of fresh ginger

1 clove of fresh garlic

1 tablespoon coconut aminos

2 tablespoons of miso paste

¼ cup of water


Instructions

  1. Preheat oven to 400 degrees

  2. Spread the chili lime seitan on a baking sheet lined with parchment paper or sprayed with oil 

  3. Bake for about 15 minutes or until golden brown

  4. Slice vegetables into sticks and set aside

  5. In a blender or food processor, blend the sauce ingredients until smooth

  6. Remove the seitan from the oven and allow to cool 

  7. Make your prepare rice paper rolls according to the directions on the package 

  8. Fill with seitan and vegetables and roll

  9. Serve with almond butter dipping sauce
