Curry Seitan Cucumber Sliders

Ingredients

2 tablespoons Jem Organics Cashew Curry Tahini 

1 package Original Blackbird Seitan

½ teaspoon coriander, cumin, turmeric, black pepper, and salt 

1/2 tablespoon maple syrup

1/4 cup plain, unsweetened non dairy yogurt

1 long english cucumber

Instructions

  1. Remove seitan from package and shred using kitchen shears or a knife

  2. Combine seitan, two tablespoons of yogurt, cashew curry tahini, maple syrup, and spices in a medium bowl

  3. Add seitan to a medium skillet and saute on medium high heat for 6-8 minutes, stirring occasionally

  4. Remove from heat and allow to cool 

  5. Slice a cucumber into equal ¼ inch rounds

  6. Spread about half of a teaspoon of yogurt onto half of the cucumber slices

  7. Place the seitan on top of a cucumber slice with yogurt and top with another cucumber round of equal size

  8. Place a toothpick through the cucumber sandwich and continue until all the seitan has been used

  9. Serve immediately or store in the refrigerator until ready to serve
