Seitan Gyros

Ingredients

  • 2 packages of Blackbird original seitan

  • ½ cup of plain, unsweetened non dairy yogurt

  • 1 tsp of coriander, cumin, smoked paprika, oregano, garlic powder, salt, and black pepper

  • ⅛ tsp cinnamon

  • Juice of one lemon (~1 ½ tbsp lemon juice)


To serve:

  • 6 pitas

  • Tahini 

  • Cherry tomatoes

  • Romaine lettuce

  • Non dairy tzatziki sauce

Instructions

  1. Prepare the marinade by combining the yogurt, spices, and lemon juice in a medium bowl

  2. Add in the seitan and mix until evenly coated

  3. Cover the bowl and allow it to marinate in the refrigerator for at least an hour (the longer it marinates the better!)

  4. When you are ready to cook the seitan, you can grill the pieces for 4-6 minutes on each side on a grill pan sprayed with oil or pan fry the seitan for 4-6  minutes on each side on a pan sprayed with oil

  5. Build your gyro by adding seitan, tomatoes, romaine lettuce, non dairy tzatziki sauce, and tahini

  6. Enjoy!
