Vegan Shepherd’s Pie (Chili Lime Seitan Filling)

Serves 6

INGREDIENTS

For the Mashed Potatoes…

  • 4 Medium/Large Russet Potatoes

  • 1 tablespoon Vegan Butter

  • 1 teaspoon Minced Garlic Cloves

  • 3 tablespoons Non-Dairy Milk (Suggested: Oat)

  • 1 teaspoon Freshly Chopped Dill

  • 1 teaspoon Freshly Chopped Parsley

  • 1/4 teaspoon Salt

  • 1/4 teaspoon Ground Pepper

For the Filling…

  • 2 boxes Blackbird Foods Chili Lime Seitan* (16 oz- Ground in Blender)

  • 3 teaspoons Minced Garlic Cloves

  • 1/2 cup Chopped Onions

  • 2 cups Frozen Vegetables Mix (Carrots, Corn, Peas, Chopped Green Beans, etc.)

  • 2 teaspoons All Purpose Flour

  • 2/3 cup Vegetable Broth

  • 2 teaspoons Freshly Chopped Dill

  • 1/2 teaspoon Freshly Chopped Parsley

  • 1/4 teaspoon Salt

  • 1/2 teaspoon Ground Pepper

METHOD

For the Mashed Potatoes…

  1. Boil potatoes in large pot until very soft. Remove potatoes from pot and place in mixing bowl fitted with paddle attachment. Begin mixing on low speed.

  2. Add minced Garlic and Vegan Butter to saucepan. Gently fry garlic until slightly golden.

  3. Incorporate garlic/butter mixture into the potatoes. Add in the Non-Dairy Milk, Dill, Parsley, Salt, and Pepper. Mix on medium speed until potatoes are creamed and fluffy.

For the Filling…

  1. Preheat the oven to 400 degrees Fahrenheit. Blend Chili Lime Seitan in blender until shredded/ground.

  2. On low/medium heat skillet with a little bit of oil. Add in ground Seitan, Minced Garlic, and Chopped Onions. Cook until warm and then add in the Frozen Vegetables. Cook until mixture is warm (a few minutes) and then stir in the Dill, Parsley, Salt, and Pepper.

  3. Sprinkle seitan/veggie mixture with All Purpose Flour and stir to evenly distribute. Turn temperature on low and then pour in the Vegetable Broth. Cook until broth is almost totally absorbed.

  4. Remove skillet from heat and spread Mashed Potatoes evenly over top of the seitan/veggie mixture.

  5. Bake Sheperd’s Pie for 25 minutes. Let cool for 10 minutes and serve.


NOTES

  • *Blackbird Foods Rosemary Garlic or Original would also taste great in this recipe. If using Original, you may need to add in additional spices.

  • Keeps well in the fridge for 2 days.
