“Chicken” Salad Sandwich

INGREDIENTS

For the Chicken Salad…

  • 1 8oz package of Original Seitan, roughly chopped 

  • 1 Celery Stock, finely diced

  • ¼ of a White Onion, finely diced 

  • ¼ cup Walnuts, chopped

  • ½ cup Grapes, halved 

  • 1 Tbsp Parsley, chopped

  • ¼ cup Vegan Mayonnaise (extra needed for bread)

  • 1 Tbsp Dijon Mustard 

  • 1 tsp Vinegar 

  • Salt and pepper, to taste

To Assemble…

  • 1 Beefsteak Tomato, sliced thin

  • 1 head of Romaine Lettuce, cleaned and shredded 

  • 6 slices of Toasted Bread

METHOD

For the Chicken Salad…

  1. Chop Vegetables, Seitan, Walnuts, Grapes, and Parsley. Add to bowl

  1. Add Vegan Mayo, Dijon Mustard, Vinegar, Salt and Pepper, mix well

To Assemble…

  1. Toast bread and spread vegan mayonnaise on both sides. Add scoop of Seitan Salad, Tomato and Lettuce 

  2. Serve garnished with pickle spear
