Holiday Leftovers Sandwich
Recipe by Blackbird Foods
Serves (At Least) 3 Sandwiches
INGREDIENTS:
1 box Blackbird Rosemary Garlic Seitan (8 oz)
6 Slices of Sturdy Bread (of your choice)
3 tablespoons Vegan Mayo
6 tablespoons Cranberry Sauce
1/2 cup Gravy*
1 cup Stuffing*
1 cup Mashed Potatoes*
Oil or Butter for pan
*You can substitute these items with whatever Holiday leftovers you have! Leftovers may include Squash, Sweet Potatoes, Corn Casserole, Green Bean Casserole, or even Mac and Cheese.
METHOD:
Lightly toast the bread (only one side) in a pan with a bit of oil or butter.
While this is going, lightly pan fry Blackbird Rosemary Garlic Seitan in a pan with a bit of oil. Heat up the Gravy, Stuffing, Mashed Potatoes (or whatever leftovers you’ll be using).
Create an assembly line with the bread slices (toasted side face down). Spread 1/2 tablespoon of Mayo on each slice. Then spread 1 tablespoon of Cranberry Sauce on each slice.
Everything else will now only be added to one side of the sandwich (3 slices). Evenly spread 1/3 cup Stuffing and 1/3 cup Mashed Potatoes on each slice of bread. Add 1/3rd of the pan fried seitan next and then top with roughly 1/8 cup Gravy. Take the slice of bread with mayo and cranberry sauce and sandwich it on top.
Attempt to slice and enjoy!
Optional step: You can create your own “Moist Maker” like Ross did on Friends by soaking an extra piece of bread in gravy and adding it to the middle of your sandwich. I would put it between the stuffing and mashed potatoes.
NOTES:
This sandwich cannot be assembled ahead of time. Hopefully you have all of the leftovers already made and you aren’t making everything from scratch for this sandwich!
Blackbird Original Seitan would also work well.
