Sun Dried Tomato Panini

Makes 2 sandwiches 

INGREDIENTS

For the Aioli 

  • ¼ cup vegan mayo 

  • 3 cloves minced garlic 

  • 2 Tbsp lemon juice 

  • Salt and pepper to taste 

For the Sandwich 

  • 2 ciabatta rolls, cut in half 

  • ¼ cup garlic aioli 

  • 2 handfuls of spinach

  • 4 slices vegan cheese 

  • ¼ cup chopped sundried tomato 

  • 1 package of garlic rosemary or original seitan

  • 2 Tbsp sundried tomato oil

METHOD

  • Make garlic aioli and set aside 

  • Assemble sandwich by cutting ciabatta in half, adding 1-2 Tbsp aioli to both sides, then add spinach to both sides, a slice of cheese to both sides, chopped sundried tomatoes to both sides and garlic rosemary seitan to the bottom half, close sandwich and brush the outside with sun dried tomato oil 

  • If you have a panini press, cook until golden brown and cheese is melted 

  • If you do not, cook in a pan and press sandwich down or weigh it down by placing another pan on top of the sandwich

  • Serve once both sides are golden brown and cheese is melted
