Crispy Rosemary Garlic Seitan Sandwiches

Makes three sandwiches 

Ingredients

1 package blackbird rosemary garlic seitan (original will also work) 

1 ½ cups seasoned breadcrumbs of choice

1 tomato

3 pieces of green leaf lettuce

1 avocado

3 buns/rolls of choice

Lemon Tahini Spread:

4 tbsp tahini

2 tbsp nutritional yeast

4 tbsp lemon juice

½ tsp garlic powder, red pepper flakes, and salt

Instructions

  1. Preheat your oven or air fryer to 425 degrees

  2. Place breadcrumbs in a shallow dish

  3. Remove seitan from package and coat each piece in breadcrumbs

  4. Place breaded seitan in airf ryer basket or onto a baking sheet lined with parchment paper if you are using the oven

  5. Air fry for 15-18 minutes or bake for 25-30 minutes flipping halfway through 

  6. While the seitan cooks, cut the avocado and tomato into thin slices

  7. Prepare lemon tahini spread by mixing together all the ingredients until well combined

  8. To make your sandwiches, layer lemon tahini spread, avocado, tomato on one side of the roll and the lettuce and crispy seitan on the other

  9. Close, slice, and enjoy!

Notes: 

If using plain breadcrumbs, add salt, garlic, and onion powder to the breadcrumbs

If your tahini is thick, you can add ½ tbsp of water to reach a more spreadable consistency
